Hidden beneath Dragon’s Hill in a remote part of Tarrazú, Don William transformed his family’s coffee tradition by choosing to process his own cherries rather than sell them at unstable market prices.

Unable to secure affordable loans for a wet mill, he boldly focused on natural processing the best cherries while selling lower-quality lots to sustain cash flow.

He named the mill after his daughter Hellen, who supported him while raising her own child. Despite early challenges, the exceptional quality of their coffees soon attracted demand that now exceeds supply.
